But the following recipes unite a thick and chewy\u00a0gingerbread fa\u00e7ade with a vanilla ice cream interior for a cool-warm mouthtaste that can be enjoyed all year round. I made these gingerbread sandwiches a few weeks ago over the Christmas holidays, hence the Santa sack with eyes\u00a0idling off into the distance.<\/p>\n<p style=\"text-align: center;\">* * *<\/p>\n<p style=\"text-align: center;\"><strong>Gingerbread<\/strong><\/p>\n<p style=\"text-align: left;\"><strong>Ingredients (enough for around 8 sandwiches):<\/strong><\/p>\n<ul>\n<li>2.5 dl light brown or muscovado sugar<\/li>\n<li>0.75 dl light syrup<\/li>\n<li>0.75 dl water<\/li>\n<li>150g butter or margarine<\/li>\n<li>1 tbsp cinnamon<\/li>\n<li>1 tbsp ginger<\/li>\n<li>1 tsp cloves<\/li>\n<li>8 dl plain flour<\/li>\n<li>1.5 tsp bicarbonate of soda<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ul>\n<li>Put the brown sugar, light syrup, and water into a saucepan, and bring the mixture to a boil.<\/li>\n<li>Add the butter to the saucepan, and watch it melt.\u00a0Now add the cinnamon, ginger, and cloves.<\/li>\n<li>Allow the mixture to cool, resisting any inclination to stir.<\/li>\n<li>Stir in the bicarbonate of soda, and 6-7 dl of flour. Save the rest of the flour\u00a0for later.<\/li>\n<li>Wrap the dough in plastic wrap, and place in the fridge for anything from half an hour to overnight, depending on your hunger and your desired intensity of gingerbread.<\/li>\n<li>At the end of your chosen\u00a0passage of time, set the oven to 175C.<\/li>\n<li>Place the chilled dough onto a floured table, and knead in\u00a0the remaining flour.<\/li>\n<li>Roll the dough thinly but not too thinly &#8211; to a thickness of around 1 cm &#8211; and cut the gingerbread with a knife or cutter. Squares will do, or circles with crinkled edges, or whatever shape you like: get festive with cutters in the shape of snowmen or reindeer.\u00a0Place the gingerbread on sheets\u00a0of greased baking paper.<\/li>\n<li>Bake the gingerbread in the oven at 175C, for around 6-8 minutes.<\/li>\n<li>Allow the gingerbread to cool on the baking paper, before storing at room temperature.<\/li>\n<\/ul>\n<p style=\"text-align: center;\">* * *<\/p>\n<p style=\"text-align: center;\"><strong>Vanilla Ice Cream<\/strong><\/p>\n<p><strong>Ingredients\u00a0(makes 1 litre):<\/strong><\/p>\n<ul>\n<li>5 dl double cream<\/li>\n<li>5 dl milk<\/li>\n<li>2 dl sugar<\/li>\n<li>1 vanilla pod or 2 tsp vanilla essence<\/li>\n<li>Pinch of salt<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ul>\n<li>Whisk all of the ingredients together until the sugar dissolves.<\/li>\n<li>Pour the mixture into an ice cream machine, and allow the machine to function according to its will.<\/li>\n<li>Keep in an airtight container in the freezer until ready to serve.<\/li>\n<li>Garnish with crumbled gingerbread or flakes or drops of chocolate.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Whether dunking figures headfirst into hot coffee, laying waste to two-story family homes and rummaging for the fragments of icing and chocolate, or pressing half-imagined men and women together in indecent postures before licking them over and devouring them completely, everyone in some shape or form likes gingerbread around the wintertime.
